Moist banana cake, easy to make and uses up overipe bananas

Method

  1. Use a food processor Pre heat oven to 160C / gas mark 3
  2. Add all ingredients and blend until well mixed
  3. Pour into lined loaf tin
  4. Bake for 1 hour
  5. Cool and enjoy
  6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

    I've tried this again with a lot more success. I creamed the sugar and margarine first and then added the other ingredients one by one. I only added 2 eggs but also added 1tsp of baking powder. Fan oven set at 150 and voila, a light and fluffy banana cake. Also added some chopped pecan nuts for a bit of extra crunch. Will definitely do again now.

    I'm cooking this for the second time, first time turned out very yummy- I don't have a food processor but I added ingredients as follows- cream butter and sugar, mash (very) overripe banana separately then add and mix in, then flour bit by bit, and finally mix in eggs. Also some people said margarine says it turns it stodgy.. I used clover and I didnt have this problem, I suppose it depends which one you use?

    So annoyed this does not come up in the search for banana cake - I made this and was told by a friend that it was 'the best banana cake ever'.... SO yummy and SO simple!

    I cooked it for the suggested time, found the skewer wet. Kept on giving extra time, eventually took it out after 100 minutes. Still raw in the middle. Conclusion, did not rise enough - add baking powder if i do it again, or maybe i will look for another recipe. I note that other recipes use more heat too. Not to be recommended in my view - i don' t like wasting a batch of ingredients, and to have to repeat a recipe several times before getting it to an acceptable level, is simply not on for something as simple as this.

    On further thought i realise that i have been dsappointed with my last two r three cakes all for the same reaon, although all different recipes. I suspect that the flour i bought as SR is in fact plain flour. I am going to scrap it, buy some more- a different brand, and have another go at this recipe as soon as i have some more suitable bananas.

    Made double the mixture in two loaf tins x mixed with electric hand mixer x delicious and crunchy outside x will try walnuts next time x thank you for this recipe x

    Yum Yum!!! I made this tonight, very easy! I don't own a processor, only an electric hand whisk from the dark ages. (Handed down from the grandparents) but I prefer to do these things manually, get a good work out, and a strong right arm :) Anyway, iv treated myself to the first slice with a little custard, and oh my goodness this is scrummy!!! Not too sweet, beautifully light and just yum! I used butter instead of marg, and did add some chocolate pieces instead of walnuts as I doubt my children would like the but version. Next time ill include them, then I don't have to share ;)

    The first time I made this cake it was a little stodgy. However the second time I used 2 medium eggs instead of three and it turned out perfect.

    This cake is lovely! I doubled the recipe, added dark chocolate chips and sultanas. Baked it in a square tin and at 160C it took 1hr 10mins.

    I followed all the measurement here and added some double cream & also golden syrup. Surprisingly it came out a very good result as my housemates liked it so much. Well done!
