Moist banana cake, easy to make and uses up overipe bananas

Method

  1. Use a food processor Pre heat oven to 160C / gas mark 3
  2. Add all ingredients and blend until well mixed
  3. Pour into lined loaf tin
  4. Bake for 1 hour
  5. Cool and enjoy
  6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

    It looked and smelled lovely as I took it out of the oven. The moment I tipped it out of the tin and left it to cool on a wire rack, it rapidly started sinking to a dense, heavy, stodgy cake. I would not make this again :o(

    Made this and loved it. I made in individual little loaves and it turned out really well. I am just about to make it again but will try it in a loaf tin this time.

    This was a huge success for my 1st attempt will defo be one of those cakes that I make time & time again. I added a couple of drops of lemon juice to prevent the banana from going brown and added two tablespoons of coconut - Delious

    Took everyones advice and used butter instead of marg, it was fantastic! I use the word 'was' as it lasted about 10 minutes... It was quite dense and very moist, just how a good banana cake should be. Nom!

    just made this for first time. after reading some of the comments about being 'stodgy', i added 1tsp of baking powder in with the SR flour.....good results and it tastes great

    A really brilliant recipe. Quick, simple and probably the lightest banana cake you'll eat. My friend couldn't believe it was a banana cake because it was so light and demanded the recipe on the spot.

    Just made this once again - absolutely gorgeous! Made 2 cos they don't last 2 minutes :). Expat - I don't have a food processor but it only takes a couple of minutes to whip up by hand Kitchen smells heavely

    Expat - cream butter and sugar, then add 1 egg and a spoon of lour at a time. Add rest of flour and mix, add bananas and vanilla, pour into tin and bake x

    I'm normally quite successful at the old cake baking but this one didn't come out too well. I followed the ingredients and timing as the recipe but set the oven to 140 as it's a fan so not sure whether this is why the cake sank and is slightly stodgy, as a lot of people have noticed. I want to try it again so can people let me know what they've done differently to get a successful result. Thanks
