Moist banana cake, easy to make and uses up overipe bananas

Method

  1. Use a food processor Pre heat oven to 160C / gas mark 3
  2. Add all ingredients and blend until well mixed
  3. Pour into lined loaf tin
  4. Bake for 1 hour
  5. Cool and enjoy
  6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

    I have made this cake for my friend's birthday for the first time. Everyone loved it. I have added chopped Walnut as suggested. I also squeezed a bit lemon to the banana before mashing to keep the colour and give it a bit of tang. I also used butter cream icing and whole walnut to decorate it. I am going to make it again for a dinner party. THANK YOU for the fantastic recipe. Try the butter cream icing: 250g room temperature butter 6 tbsp icing sugar, sieved (add more if you like it sweet) 1 tsp vanilla extract 2 tsp dark rum Have fun baking. :-)

    This cake was so easy to make, didn't have any walnuts so used almonds instead, it tasted great and the kids loved it. I had to bake it for longer than an the recipe said but not a problem.

    Way too much sugar in this recipe. The birds enjoyed it though but it was a waste of the ingredients. If I try it again I will only use half the sugar.

Played around with it and added some plums and also dessicated coconut and the results are just as good, if not butter. If there is any recommendation that I would give is to make double quantities as it goes pretty quickly!

    I have used this recipe several times now and it always turns out wonderfully! I usually add about 70g chopped up dark chocolate and stir this into the mix before baking.

    looked good in the oven, then collapsed after it came out! it was dense and flat - more like a banana custard - tastes ok, but don't expect a 'cake' with this recipe. won't make it again.

    A beautiful cake, I added a small bar of broken chocolate to the mix to give a lovely gooeyness when the cake was baked and placed banana on the top whilst baking it. I served it warm from the oven with ice cream - absolutely divine :-)

    This has become my siganture piece and my daughters are always telling me their friends want to know when I'm making the next one! it's got to the point when eating a banana is almost a sin as that reduces the chance of the next cake being baked!     I'm sorry but this is the worst thing I've baked in my life! The cake developed a crust and yet remained uncooked on the inside. Tried leaving it longer than recommended but it made no difference. I followed the recipe to the letter but the results were far from desirable. Waste of time, ingredients and effort! If you want my advice, find another recipe as this one has turned out to be too easy to be true......

    Fact - this is too easy to make. Just throw everything in a bowl, mix it, then put it in the oven. The fun thing about this is, try adding maybe, a tea spoon of nutella? or some orange rind, lemon rind. Maybe change vanilla essence to Orange. just chuck random stuff in, its great fun
