Moist banana cake, easy to make and uses up overipe bananas

Method

  1. Use a food processor Pre heat oven to 160C / gas mark 3
  2. Add all ingredients and blend until well mixed
  3. Pour into lined loaf tin
  4. Bake for 1 hour
  5. Cool and enjoy
  6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

    This was absolutely the worst banana cake recipe I have ever made. After one mouthful, the rest went out to the birds. Fingers crossed tomorrow morning they won't all be lying about in the garden with their little legs in the air!!!

    this is a really good recipe. i am ceoliac and have had trouble finding a good cake recipe. that my gluten free flour will make. and my whole family love this too. i used gluten free plan flour with baking powder that is all i changed in the recipe

    I have never reviewed anything on a website before, but I had to review this recipe. I wasn't sure how it would turn out after seeing some of the comments about it being stodgy and heavy but it is delicious. I used butter instead of marg as some others have done and I used golden caster sugar. It is really light and fluffy and rose beautifully. I'm now trying to resist eating it all before my husband comes home so that he can see I've actually made a cake!!!

    Made this with dairy free sunflower spread for my son who is allergic to dairy. Also didn't need a food processor - just a very enthusiastic toddler with a spoon!!! Cooked up lovely and everyone enjoying it - very moist.

    Lovely cake. Used butter in one version and part butter and part coconut oil in another. Both delicious. I don't have an electric food processor so mixed it in a manual one. I think it would work fine in a blender too especially if you put the wet ingredients in first.

    Ive just made this and its in the oven now-can't wait to see what it comes out like. I've made the banana and walnut loaf several times and that is delicious but as it needs 500g of bananas and I only had 2 very ripe sad ones I thought I would try this. Very easy to mix- took me under 10 minutes with food processor. Fingers crossed its a success.

    Sick of looking at those sad bananas. Mixed whole lot with a hand held electric whisk. Just out of oven,looks fantastic!. Wish I could try it but hate bananas!

    I tried this recipe and there are several things wrong with it (and i only realised this after trying others) 1) there isn't enough self raising flour hence my cake was like a brick. should be 4 oz butter, 6 oz sugar and 8 oz self raising flour 2) the oven is not hot enough, should be 180 degrees 3) the flour shouldn't be blended with the other ingredients, This only makes the cake mixture stiff and so will not rise properly when in the oven happy cooking and even happier eating!

    This is a lovely recipe thankyou,i did use butter and added 1 tsp baking powder and used an electric hand whisk,i will be making this one again,so light and very moreish ;D

    So easy to make and tastes delicious. I have made it twice now, first time I added sultanas and this time I have added walnuts. Cant wait for it to be cooked :)
