Moist banana cake, easy to make and uses up overipe bananas

  • 2 ripe bananas (overipe is best)
  • 170g caster sugar
  • 170g self raising flour
  • 170g soft margarine
  • 3 eggs
  • Fewdrops vanilla essence


    1. Use a food processor Pre heat oven to 160C / gas mark 3
    2. Add all ingredients and blend until well mixed
    3. Pour into lined loaf tin
    4. Bake for 1 hour
    5. Cool and enjoy
    6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

I doubled this recipe and had a great and soft cake. Decorated with some caramelise bananas. Yummy.

I made this recipe without margarine and changed some of the ingredients, and instead of a loaf tin, I used an oven tray, still turned out awesome, thank you.

3 overripe bananas
200g SR flour
200g caster sugar
3 eggs
100ml soy milk

Can't rate this highly enough. Made it a few times and it has always gone down a treat. As a twist try using mince instead of bananas and a pastry instead of sponge. Makes a superb meat pie!

Omg my 1st foray into cake making (normally leave those to my wife, while i take care of the bread making) and i have been ORDERED that i have to make this again by my family, even more surprising is that my wife and her mum have asked me for the recipe :)

Can you replace the bananas with the same quantity of orange or lemon marmalade?

This seems to be a basic cake recipe with added banana so I used my regular method (weighing eggs first then using equal of the other ingredients - 155g this time). I added a bit of raising agent as well as using self raising flour to give a boost. I made the cake mix first with the traditional method then stirred in the mashed banana. I used 210g of bananas and added some walnuts and chocolate chunks. It made 20 small-medium sized cakes which were amazing! I topped with buttercream and chopped walnuts and chocolate chunks for decoration and I was really quite impressed for my first attempt! They pretty much had the texture of normal cakes, not stodgy like I thought. I think I could have got away with a bit more banana. I love this simple recipe which you can play about with adding nuts / chocolate etc. And they're gorgeous cakes!

Made this one Sunday afternoon to use up some over-ripe bananas. Didn't have any vanilla so sprinked in some mixed spice. And I had 3 bananas rather than two. Oh and I didn't have any caster sugar so used soft Demerara :-) This meant it came out a bit heavier/moist (bit like bread pudding) - but was yummy. VERY easy/quick to make but quite a slow bake.

I made this with light muscovado sugar, butter and 2 large eggs.
It rose well, came out lovely and moist, and keeps for a good few days.

Oops, must have had a very senior moment. This is in the oven, but on reading comments I realised I had forgotten to add the eggs and vanilla essence! I wonder how it will taste . . Watch this space and I will let you know.

Yum yum YUM!
I tweaked the recipe slightly and it turned out beautifully! In fact I made two, one plain and one with added raisins and dried cranberries.
I used two eggs instead of three, used agave nectar instead of sugar, added a dollop of whole nut butter and 2 tbsp chia seeds. Will defo make again!

Easiest cake I ever made, and one of the most delicious. Chucked everything into the food processor (butter instead of marg so I'll probably get fat) then stirred in chocolate chunks as per several of the recommendations below. Utterly, utterly delicious. Had the first slice warm, straight out of the tin, with vanilla ice cream. Pure heaven. Will DEFINITELY make again. Effortless and exquisite!!!

One of the easiest cakes I have ever made! Put in a handful of chopped walnuts after blending and mixed through. Might be nice as a pudd as well, when warm with a smothering of banana custard. Thoroughly enjoyed by everyone who tasted it! Will def make again!

One of my favourite recipes to make. I've found adding dark chocolate chips into it makes it a favourite!

This was a really easy cake to make, I have thrown all ingredients together. I do not have a food processor, so mixed with a fork. After good amount of elbow grease poured into lined loaf tin and then into oven for approx one hour. Came out perfect, wife wants another one now. Very recommended.

Great recipe, delicious cake. Used exact ingredients but mixed marg and sugar first followed by eggs, vanilla extract, bananas then flour. Also mixed with wisk on low. Baked for 1 hour at 160.

I don't know why, but I have had 2 not very successful cakes from this recipe. Followed exactly and they have all been dense and stodgy.
The first time, my bananas were very large so I put it down to that.
The second time, I used smaller ones - it was better but not light and fluffy.
Now I am trying for a third time, but instead of using the food processor, I am using the food mixer and so we shall see what the result is. Fingers x'd!

So easy and an absolute winner every time. I used light muscovado sugar, added a bag of chocolate chips, some spice and a bit of extra baking powder, then top with either strusel topping or a sprinkling demerara if I'm feeling lazy.

Is it possible to freeze the Banana Cake? Has anyone tried? The cake is very simple to make and everyone who hash tried it, have said how tasty it is.

I love this cake and have made it several times with a few tweaks: 200g flour, and 2 eggs, and usually just one banana which I mash with yoghurt or milk before adding to the mixture. The above ensure a perfect consistency, moist but not soggy. Also, adding chocolate in some form makes it really special.

Add chopped dates - they do sink to the bottom a bit but make it sooper dooper moist !

Always when cooking use chocolate chips and let them melt into the cake it taste is unbeatable.
