Moist banana cake, easy to make and uses up overipe bananas

Ingredients

Ingredients list: 
  • 2 ripe bananas (overipe is best)
  • 170g caster sugar
  • 170g self raising flour
  • 170g soft margarine
  • 3 eggs
  • Fewdrops vanilla essence

Method

    1. Use a food processor Pre heat oven to 160C / gas mark 3
    2. Add all ingredients and blend until well mixed
    3. Pour into lined loaf tin
    4. Bake for 1 hour
    5. Cool and enjoy
    6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

So easy to bake, always gets loads of compliments for being light, moist and with a crunchy crust. Sometimes I chuck in some chopped dark chocolate to be extra naughty.

Love this wee recipe, I prefer to blend butter & sugar seperately tho & fold flour in woth a metal spoon!! Brought it to a family get together & went down a storm!! About to make some more for my hubby now he loves it!! Light fluffy, just right!! Best banana recipe I've tried!!!

Yum. If you prefer slightly less sweet, try 100g xylitol and 70g dedicated coconut instead of the sugar. Omitted nuts and added a handful of sultanas. Yu-um!

After reviewing this recipe I checked other banana cake recipes and realise for it to work there should be less fat but more flour. Sorry no stars.

I cannot believe anyone has ever tried this recipe. Baked it today - utter disaster. Took 2 hours in cooker, fan at 170c. Far too much fat, just greasy mess. When removed from cooker just collapsed. Followed the recipe exactly, so there is something wrong with balance of ingredients. Don't waste you time. Will not do again.

Baked this today and it is delicious. I used half butter and half margarine. Also just used a hand whisk to mix butter and sugar until blended then added the rest of the ingredients and mixed until this was blended. Added a handful of chopped walnuts too. Baked in a loaf tin for 50 minutes, then very quickly sprinkled a topping mixture (PREPARED EARLIER) of :
: 2 tablespoons flour, 1/4 cup dark brown sugar and a small knob of butter, mixed all together to look like breadcrumbs. Then baked until cooked, another 15 minutes in my oven. Will definitely bake again!

Yuuuuuuummmmmmy! Really simple (made in Kitchenaid stand mixer), added coconut and used 2 eggs and 1tsp baking powder as suggested in another comment. Cooking time slightly different - 150 Fan for 65 minutes. Will be making it again.

I followed all the measurement here and added some double cream & also golden syrup. Surprisingly it came out a very good result as my housemates liked it so much. Well done!

This cake is lovely! I doubled the recipe, added dark chocolate chips and sultanas. Baked it in a square tin and at 160C it took 1hr 10mins.

The first time I made this cake it was a little stodgy. However the second time I used 2 medium eggs instead of three and it turned out perfect.

Made this a few times and it's so yummy! I followed the recipe exactly and never had any problems. Perfect way to use up left over bananas!

Yum Yum!!! I made this tonight, very easy! I don't own a processor, only an electric hand whisk from the dark ages. (Handed down from the grandparents) but I prefer to do these things manually, get a good work out, and a strong right arm :)
Anyway, iv treated myself to the first slice with a little custard, and oh my goodness this is scrummy!!! Not too sweet, beautifully light and just yum! I used butter instead of marg, and did add some chocolate pieces instead of walnuts as I doubt my children would like the but version. Next time ill include them, then I don't have to share ;)

Excellent cake recipe, i added Brazil nuts instead or walnuts which works really well. Its a great hit with all the family.

Made double the mixture in two loaf tins x mixed with electric hand mixer x delicious and crunchy outside x will try walnuts next time x thank you for this recipe x
