Halloumi salad with houmous dressing & pitta crisps

A quick and colourful supper for two with a Middle Eastern feel

Method

  1. Heat the oven to 180C/fan 160C/gas 4. To make the pitta crisps, separate the pittas into 2 halves, cut into triangles and bake for 5-10 minutes until crisp. Toss the tomatoes, onion, and cucumber with 1 tbsp olive oil and the lemon juice.
  2. Sprinkle the halloumi with a little oregano then grill or fry until golden. Mix the houmous and yoghurt with a little water to make a dressing and season. Toss the halloumi with the salad, drizzle over the houmous dressing and serve with the pitta crisps.

    I made this and served it with cous cous on the side. I also cooked the onion and added some aubergine to it. Very filling and yummy.

    Quick, easy, yummy and healthy. Perfect! The only time I actually 'cooked' was when I fried halloumi.

    Have noticed in my local Tesco they are now doing a couple of flavoured halloumis, one with chilli, so might try that to ring the changes.

    Please correct me if I am wrong but isn't this supposed to be a light and healthy supper? Looking at the nutritional values, I would expect to die of a heart attack after eating this with the amount of fat in one serving?

    Bernie and Sarah, you could choose halloumi light and reduced fat houmous. That should make it a lot healthier...

    I think it�s a great recipe, very quick and easy to make and tastes delicious. However I find the pitta crips not that successful.
