Method

  1. Heat oven to 200C/180C fan/gas 6. Mix the muffins with the sultanas. Divide between 4 buttered ramekins or one baking dish. Cover with foil and bake for 8 mins until just warmed through.
  2. Meanwhile, place the sugar, butter and cream in a small pan and gently heat together, stirring until the sugar dissolves. Pour the sauce over the muffin mixture and serve warm with ice cream.

Get ahead

To prepare ahead, don't bake the muffin mixture, just pour over the sauce and leave to cool. Chill until ready to serve, then bake at 200C/180C fan/gas 6 for 15-20 minutes until bubbling and piping hot.

Variations

For an adult-only pudding, try soaking the sultanas in a little Marsala or medium Sherry for 5 mins before mixing with the crumbled muffins. Or, to make sticky banoffee puddings, simply swap the sultanas for 1-2 chopped bananas.

My mum helped me with this dessert, it is quick, easy and good for people with a sweet tooth! Easy for kids to make, as it is simple. I did not add the sultanas and it was very nice, but maybe next time I will add them.

Great quick dessert. I added chopped dates which I had soaked in orange juice (teetotal house) instead of the sultanas... Really gave it a proper sticky toffee flavour.

This is absolutely divine (left out the sultanas) - however I found it didn't taste like sticky toffee pudding - more like a lovely chocolate brownie dessert. I'm not complaining!! :o)

Doubled up the recipe for a family lunch. Everyone loved it, and my son and his fiance requested it next time they came for dinner. I can see this is going to become a family favourite. The best thing about it, apart from the taste, is that it really is so quick and simple to make.

This was very delicious and quick to make, replaced the sultanas with chopped banana and it was perfect. Make sure you really crumble the muffins up though, if you just break it into 'chunks' there are too many gaps and the sauce just sinks through to the bottom. Loved the hot and cold combo when it has a scoop of ice-cream on top!

Really tasty, simple and quick. Made one large instead of individuals though I'd probably make ramekins next time and use a muffin less as there was more than enough...I even had to eat a few chunks;o) Didn't soak the fruit but did dribble a little marsala over the sponge, only about a tablespoonful. The make ahead suggestion didn't work though...the muffins soaked up the sauce. Made another batch of sauce when we were ready for pud. Possibly a happy accident as the sponge was lovely and moist.

I live in France, where Sticky Toffee Pudding is scarce, so I made this on Saturday - YUM! And so quick. I didn't tell hubby (who is French) what it was but he realised straight away that it was a sticky toffee pudding.

Brilliant easy pud! Have made it twice this week with children, who have given up chocolate for lent, so we swapped the chocolate muffins for toffee muffins and it was yummy! Whole family loved it!

so I made this for sunday lunch and the big reveal was very disapointing. I can honestly say this worst desert I have ever eaten or not eaten in this case. I was mocked by disgusted diners! On the positive side the potholes outside my house are now filled! Never ever make this!

What a simple but delicious desert! I used 4 choc chip muffins and skipped the sultanas. It easily made 5 although everyone said next time make more of the yummy sauce!
