One-pot roast pork chops with fennel & potatoes

Throw your meat and veg into a pan with Italian-style flavourings and simply roast, for a no-fuss dinner

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the potatoes, fennel, pepper, thyme and garlic in a large roasting tin. Mix together the tomato paste and stock, then pour into the pan. Tightly cover with foil and cook for 30 mins. Take out of the oven and increase the temperature to 220C/200C fan/gas 7.
  2. Remove the foil and place the pork in the roasting tin, nestling in between the veg. Season well and return to the oven for 15-20 mins more or until golden brown and cooked through. Serve with the pan juices drizzled over.
Try

Make it with chicken

Put 8 chicken thighs on top of the veg before covering and cooking. When the oven temperature increases and the foil comes off, stir 250g cherry tomatoes into the veg and drizzle the chicken with olive oil. Finish cooking as above, then eat with dollops of pesto.

    I didn't have any fennel so used courgettes and aubergine chopped into medium size chunks. The flavour the sundried tomato paste gave the vegetables was really lovely. I will definately cook this again. Next time will try with lamb chops or chicken.

    Great simple and quick recipe; minimal preparation and perfect for that mid week rush. I didn't have any fennel and used aubergines and courgettes and added rosemary to my dish. The pork chops came out a bit dry; does anyone know how to avoid that? Did I over cook them? The flavours were lovely though; i reckon I'll make it with some mash potatoes next time and pour all the juices from the roasting dish onto them.

    I made this for 2, but with the same amount of veggies as suggested for 4. We really enjoyed it, but my only complaint was that the potatoes were really mushy and disintergrated, so I would chop those into large chunks next time.

    Sorry but it's not quick and the vegatables as don't cook evenly. The veg make an interesting side dish but it doesn't work with the meat cooked in the same dish. If I did it again I'd cook the meat separately.

    We really enjoyed this recipe, but as Belkey said that the potatoes had disintegrated I used new potatoes, cut into halves or quarters depending on the size. It turned out really well.

    A really great recipe, very, very easy to prepare and really tasty! My only recommendation would be to double the amount of vegetables as suggested, because for two people we were still left hungry at the end.

    Really yummy. I used pork steaks because we prefer them to chops. They didn't dry out. Also I didn't have sundried tomato paste so I used ketchup: still good. And I added green beans when I put the pork in. I would lilke to try different combinations of ingredients now. It isn't that quick (pork steaks took 20-25 mins to cook) but it is easy and yummy.

    Made this last night and was pleasantly surprised by the outcome. The pork chops definitely took longer to cook than the time suggested in the recipe but all in all it was worth the time and very little effort.

    Easy recipe, but as others suggested needs to be bulked out a little with extra veg, we have good appetites! No problems with the meat drying out, just left it covered for a while during cooking, "Simples" Did add an onion roughly chopped.

    This took a lot longer to cook than suggested, hence why it gets only 3 stars....I have a brand new oven as well; so i was surprised and I had to serve it up later than anticipated. Very tasty though once served, however, I suggest abit longer to cook when you add the pork chops.
