Chorizo chicken with chilli wedges

Wrap chicken in chorizo for an instant Spanish hit. Looks impressive enough for a dinner party too

Method

  1. Heat oven to 220C/fan 200C/gas 7. Place the sweet potatoes on a baking tray, then toss with the oil, chilli flakes and seasoning. Roast for 10 mins, then remove and reduce the oven to 200C/fan 180C/gas 6.
  2. Lay half the chorizo slices over each chicken breast, overlapping so the chicken is covered, then tuck the edges underneath to secure. Lift onto the baking tray next to the wedges, scatter the wedges with thyme leaves, then roast for 20 mins more, turning the chicken and wedges halfway until golden.

    This was so simple yet so good! While cooking on the same tray as the wedges, the chorizo released its juices which gave even more flavor to the already delicious wedges.

    Such a lovely dish!! I serve mine just with seasoned potatoe wedges & a cheese and chive dip on the side as I dont eat mayo!!

    Thoroughly enjoyed, I did a mix of sweet and ordinary potatoes, which was lovely. Only complaint is that the portion size was a bit on the small side - but that could have been because it was so nice we wanted more!

    this was wonderful,i cut the chicken through the middle before putting chorizo on and filled with low fat philly mixed with garlic! the whole family loved it!

    Delicious for a mid week meal. The chicken was uber juicy!... really speedy too! Next time I think I might put some philly or perhaps some low fat mozzarella in the chicken but it was lovely without.

    Really enjoyed this meal, would defo be making this again, quick and yummy!!! We had it with fresh salad washed down with a nice glass of white medium wine. We both cleared our plates !!!

    Made this last night, I made a pocket in the chicken and filled it with low fat mozzerella, seasoned the chicken and added a sprinkling of garlic powder, chilli flakes and cracked black pepper before wrapping the chicken with chorizo. I served my chicken with garlic mash which complimented the dish so well. Delicious!!!

    my husband and i love this but it can be a little dry so what i do is make a pocket in chicken and add lowfat soft cheese before i wrap the chorizo round fabulas

    Quick, easy and delicious. I took the "large" sweet potatoes rather too literally and ended up with more wedges than we could eat! I'll buy medium ones next time
