Ingredients

  • 2 large sweet potatoes, peeled and cut into wedges
  • 1 tsp olive oil
  • ½ tsp dried chilli flakes
  • thin slices chorizo
  • 2 skinless chicken breasts
  • few thyme sprigs, leaves stripped, half tsp dried thyme

Method

  1. Heat oven to 220C/fan 200C/gas 7. Place the sweet potatoes on a baking tray, then toss with the oil, chilli flakes and seasoning. Roast for 10 mins, then remove and reduce the oven to 200C/fan 180C/gas 6.
  2. Lay half the chorizo slices over each chicken breast, overlapping so the chicken is covered, then tuck the edges underneath to secure. Lift onto the baking tray next to the wedges, scatter the wedges with thyme leaves, then roast for 20 mins more, turning the chicken and wedges halfway until golden.

Had this tonight it's so easy and absolutely delicious As a little sauce I had low fat creme fraiche seasoned with salt and black pepper, This dish will become a firm favorite!!!!!

Amazing recipe, really filling, the different flavours and textures worked well. I served some asparagus and broccoli on the side and made some lemon butter which complimented the veg and chicken beautifully!
The wedges were well done before the chicken, so I had to keep them separately under the grill until the chicken was cooked. I didn't want the lovely wedges to burn!

Quick, easy and delicious. I took the "large" sweet potatoes rather too literally and ended up with more wedges than we could eat! I'll buy medium ones next time

Really enjoyed this. I put low fat cream cheese mixed with paprika in the middle. Will make again.

I made this and it was really easy and tasted fantastic!! Will definately make this again. I served it alongside some homemade salsa. The meal was a real hit! mmmmmmmmmmmmm

yes we loved this but found it a little dry so what i do is make pocket in chicken and fill with low fat soft cheese before i wrap with the chorizo yummy

my husband and i love this but it can be a little dry so what i do is make a pocket in chicken and add lowfat soft cheese before i wrap the chorizo round fabulas

Made this last night, I made a pocket in the chicken and filled it with low fat mozzerella, seasoned the chicken and added a sprinkling of garlic powder, chilli flakes and cracked black pepper before wrapping the chicken with chorizo.

I served my chicken with garlic mash which complimented the dish so well.

Delicious!!!

Really simple to make. We added twice as much chilli as recommend and served with a side of steamed brocolli

Really enjoyed this meal, would defo be making this again, quick and yummy!!! We had it with fresh salad washed down with a nice glass of white medium wine. We both cleared our plates !!!

Delicious for a mid week meal. The chicken was uber juicy!... really speedy too!
Next time I think I might put some philly or perhaps some low fat mozzarella in the chicken but it was lovely without.

this was wonderful,i cut the chicken through the middle before putting chorizo on and filled with low fat philly mixed with garlic! the whole family loved it!

Thoroughly enjoyed, I did a mix of sweet and ordinary potatoes, which was lovely. Only complaint is that the portion size was a bit on the small side - but that could have been because it was so nice we wanted more!

Such a lovely dish!! I serve mine just with seasoned potatoe wedges & a cheese and chive dip on the side as I dont eat mayo!!

This was so simple yet so good! While cooking on the same tray as the wedges, the chorizo released its juices which gave even more flavor to the already delicious wedges.

Very tasty as a midweek tea but not special enough for a special occasion. Anything with chorizo is always a hit in my house though so I will undoubtedly make this again. Served with white potato wedges and salad.
