Method

  1. Heat oven to 200C/fan 180C/gas 6. Put the tomatoes onto a baking tray, rub with a little oil and some seasoning, then roast for 5 mins until the skins are starting to split. Add the fish to the tray, top with most of the lemon zest and some more seasoning, then drizzle with a little more oil. Roast for 8-10 mins until the fish flakes easily.

  2. Meanwhile, cook the beans in a pan of boiling water for 3 mins until just tender. Drain, then tip into a food processor with the rest of the oil, garlic, basil stalks, lemon juice and stock, then pulse to a thick, slightly rough purée. Season to taste.

  3. Divide the tomatoes and mash between two plates, top with the cod, then scatter with basil leaves and the remaining lemon zest to serve.

I find cod quite bland so use haddock instead. A nice meal but needs extra seasoning - juice the whole lemon, 3 cloves of garlic. Also nice with butter bean mash

I've made this a couple of times now and it never fails to satisfy. I do cheat a little though and add some oven chips which makes this a good hearty dinner. I've never found frozen soya beans but a tin of butter beans seem to work fine (have to remember to heat them up though!) Five stars.

The flavours are delicate rather than strong, but the combination with the tomatoes is great. I did add three times as much garlic to the mash and perhaps a bit with the fish would be good too. The lemon zest was definitely good with it. Very pretty on the plate. The reason for tomatoes on the vine is to stop them rolling around your baking tray!

Good basic recipe, especially if you think you're not sure what to do with fish. Lots of variations are possible. I did cod, smashed up some boiled potatoes and used a size bigger in tomatoes as I think cherry would have virtually dissolved in the oven. Followed previous suggestions of putting a little balsamic and sugar on the tomatoes as well as oil, salt and pepper. Didn't bother with lemon rind or garlic but would probably use garlic next time. Poured all juices over the meal. Easy and tasty!

Didn't have the soya beans so I added the garlic and lemon juice to the fish as it was roasting and then had it with normal mash. Lovely!

Disappointing outcome despite the ingredients. I found the fish bland despite the non zest and seasoning and the same went for the mash. I used a whole packet of basil with the soya beans and the rest of the ingredients but it lacked depth. Honestly I wouldn't repeat the meal

Made this for an easy Friday night dinner and thought it was fab! I roasted the garlic first, used less stock and added extra lemon juice and basil leaves to the mash. Served with a sweet jacket potato and tenderstem broccoli which both complimented the dish really well and made it a more substantial meal. Would definitely make again.

Made this last night and found it surprisingly bland - ended up adding extra lemon juice, white wine and some parmesan to the mash - the fish I thought was quite tasteless too - I took on the tip of roasting the tomatoes with some sugar and balsamic and that did add some extra taste thankfully. I would definitely do the mash again but possibly with a tastier fish or meat.

Amazing tasty meal which I have done many times for supper and even for a Friday night dinner party. It is filling enough just with the mash but if you want to go overboard add a stack of chunky chips on the side......oven chips of course midweek ! It is really healthy too!

Used a mixture of plum and cherry toms. On the advice and comments re garlic and lemon juice i used all the beans (500g) but same amount of garlic and lemon. Roasted toms for same amount of time as the fish. Also served with some jacket sweet potato. It all went well together and my guest was impressed. Will def be making this again.

I just made this for lunch for my friends and it was very much liked. It's an excellent dish for weekend lunches as it's light, tasty and leaves enough space for dessert :)

Bursting with delicious flavours! I took on board some of the comments and roasted some garlic with the tomatoes which I sprinkled with a pinch of sugar and some balsamic vinegar. I also spread some wholegrain mustard on top of the cod before baking.
I used broad beans for the mash but next time would use less stock as it was the consistency of baby food! My husband did ask "what's for the main course?" but it was surprisingly filling and I will definitely make this again.

Great recipe! I used butter beans instead of soya beans as I couldn't find them in the supermarket, and I added basil leaves as well as the stalks in the mash and it was beautiful and fresh with the lemon too. Definitely recommend this recipe and I'll be cooking it again soon!!

This was absolutely delicious. The flavours complimented each other so well. A huge hit with my other half, who is a bit hard to please, so a winner for me. It just took a bit longer to cook the soya beans to 'just tender', 8 minutes. But still gave it a 5. Wonderful!

Lovely creation by using an alternative mash like soy beans! Didn't know that it could rival the taste of classic potato mash! And the lovely twang of lemon zest & juice add excitement to the taste. Simply delicious and easy ~ great for quick suppers with family.

Beautiful. Used Seabass as Cod was too pricey but itvwas heavenly. Couldn't find soya beans so used butter beans instead. Thus got a big thumbs up from himself who is not one for venturing outside of the mashed potato zone :) Definitely will make again.

I use fresh runner beans, which I steam to a light crunch and then put in the food processor with the rest of the ingredients. Absolutely amazing! Can put this sauce on chicken or steak, always good!
