Lemon cod with basil bean mash

Method

  1. Heat oven to 200C/fan 180C/gas 6. Put the tomatoes onto a baking tray, rub with a little oil and some seasoning, then roast for 5 mins until the skins are starting to split. Add the fish to the tray, top with most of the lemon zest and some more seasoning, then drizzle with a little more oil. Roast for 8-10 mins until the fish flakes easily.
  2. Meanwhile, cook the beans in a pan of boiling water for 3 mins until just tender. Drain, then tip into a food processor with the rest of the oil, garlic, basil stalks, lemon juice and stock, then pulse to a thick, slightly rough purée. Season to taste.
  3. Divide the tomatoes and mash between two plates, top with the cod, then scatter with basil leaves and the remaining lemon zest to serve.

    I was surprised by the well integrated taste of the lemon zest. Really liked this dish. Though I had some problems finding the soya beans.

    Neither my husband nor daughter were impressed with the sound of this recipe .... but I went ahead anyway, and we all absolutely loved it! We thought the soya and basil mash was really delicious. I'll definitely do it again.

    This recipe is delicious. My daughter did not fancy the sound of the basil bean mash at all, but once she tried it, she loved it. The mash combined with the lemon, fish and tomato is just great. Of course, you could use other white fish like pollack or coley fillets.

    Really tasty. I also used broad beans and used the zest and juice of half a lemon, as I felt too much lemon could be overpowering. I also found that 100ml of stock was too much. But next time I will just use 50ml stock. Extremely quick to do, but impressive.

    Bit disappointed with this one. The fish was lovely and the cherry tomatoes were just right - added them with the fish as suggested. the mash didn't really work for me though, didn't really like the taste or texture. Will make again but play around with the mash to see if I can get a better result

    Yum! Lemony garlicky goodness. I couldn't get my hands on any edamame so substituted cannelini beans. The mash was delicious but was more of a puree. Next time if using cannelini beans I would process the basil and garlic then add mashed cannelini beans to give more of a chunky texture. Great recipe, can't wait to try it with edamame.

    Brilliant recipe - worked so well and looked so pretty and tasted amazing! I had to trek to Waitrose for the soya beans as they're not available in my Tesco but that was fine!

    The soya bean mash was a bit bland and needed extra lemon, basil, garlic and seasoning to help. It tasted quite nice when eaten with the cod and but lacked flavour by itself. A nice enough meal but I wouldn't rush to make it again. Also definitely need some veg or potatoes with this, not enough with just the soya bean mash and cod.

    The flavours worked well but overall, I felt this dish was somewhat bland. The basil bean mash was particularly bland despite adding lots of seasoning. I would not cook this again.

    I roasted plum tomatoes for 40 mins at 180 fan with 2:1 olive oil:balsamic vinegar and a teeny sprinkling of caster sugar. Cooked the oiled & seasoned cod without lemon zest for 8 mins on its own and it was perfectly cooked and didn't 'leak'. Bean mash was delicious and the whole thing with the tomatoey juices was just great. Lots of yums and mmmms. Couldn't fault it - 5*
