An easy recipe to use up cooking apples that tastes sublime

Method

  1. Cook the apples with a splash of water until completely soft, adding enough sugar to sweeten. Cool, then fold in the rest of the ingredients.
  2. Spoon into pretty glasses and chill for 30 minutes.

    I would like to try this, but DOUBLE CREAM for a g.i. dieter? What can I use for a substitute please, without spoining the overall taste?

    My mother used to make this for a light easy autumn pudding back in the '60's. The recipe lived up to my memory of the dish. Light and fresh - yum! Oh and Iused light cream which didn't make a difference.
