Method

  1. Prepare the vegetables: 1. Peel and chop the onion 2. Slice the mushrooms 3. Deseed and dice the red pepper 4. Chop the tomato
  2. Fry the onion in oil until soft.
  3. Add the mushrooms and red pepper and cook for a further 2 minutes.
  4. Stir in the rice.
  5. Mix the stock powder with the water.
  6. Add the stock, peas and curry powder to the rice mixture.
  7. Simmer for 15 minutes, until the rice is tender.
  8. Serve the rice in a bowl and sprinkle the chopped tomato on top.

    I substituted sweetcorn for the tomato and added a packet of cooked king prawns and a cooked sliced chicken breast to make it a family meal for 3. Some mango chilli chutney as a side. My hard to please 14 year old proclaimed it "delicious"

    Excellet easy recipe to make, although I put a bit less curry powder in to make it more family friendly!

    I added in sweetcorn in place of the pepper as I forgot to pick one up. I was really impressed; always made a mess of rice before so I tend to stay clear, but this turned out great!! Will be a definite fixture in my diet now!!

    Was looking for a savoury rice dish that WASN'T out of a packet! This was exactly what I was looking for...soooo yummy! I left out the tomatoes and used hot chilli powder in addition to curry powder as I like spice! YUM!

  • 1/2 red pepper
  • 1 tomato
  • 1 x 10ml spoon oil
  • 150g long grain rice
  • 1 x 5ml spoon vegetable stock powder or cube
  • 550ml boiling water
  • 50g peas
  • 1 x 10ml spoon curry powder
