Method

  1. Cook the linguine. Meanwhile, tear the ham into small pieces and fry in the olive oil until golden and crisp.
  2. Drain the pasta, reserving a little of the cooking water, then return to the pan. Tip in the cooked ham. Mix together the lemon juice, egg yolks and crème fraîche, then add this to the pan along with the basil and Parmesan. Mix in with tongs, adding a little of the cooking water, if needed, to make a creamy sauce that coats the pasta. Serve with extra Parmesan grated over the top, if you like.

This recipe is the new family favourite!! I added onion and mushrooms to the ham, used the whole of a small lemon and the whole pot of growing basil from the supermarket and it worked like a dream! So quick and easy it didn't feel like I had actually cooked!!

Slightly lacked the flavour promised but a good quick meal I will probably make again. I used this amount of prosciutto for 2 people and seemed about right to me!

Nice light dish. I too added half the quantity of lemon, which was definitely the right decision I'd say...

Lovely recipe - I made it with wholegrain linguine and used the whole egg rather than just the yolk (just be careful not to heat it too much or it'll scramble!). Added some peas for colour and sat on the balcony in the sunshine with a glass of wine!! Yummy!

Gave it 3 stars last time but made it again tonight and it was really tasty! Not sure what I did differently I think I added bit more lemon and basil this time, also a bit of black pepper.

Quick, easy and delicious. Wondering if using egg white instead of yolk will make much difference as I want to reduce fat?

It was OK but nothing special. Advantages: it was quick to prepare and good if you are watching those calories! Disadvantages: a bit bland. My daughter found it a sweet. Also tbh the recipe says 'for 6' but I cooked it for 4 using same quantities as in recipe and it was just enough and we're not piggy eaters.

Perhaps a little bland if your used to richer creamier sauces but, I thought this was a lovely, fresh, light alternative to your average pasta dishes. Perfect if you're in a hurry and watching the calories ;-)
