Method

  1. Cook the linguine. Meanwhile, tear the ham into small pieces and fry in the olive oil until golden and crisp.

  2. Drain the pasta, reserving a little of the cooking water, then return to the pan. Tip in the cooked ham. Mix together the lemon juice, egg yolks and crème fraîche, then add this to the pan along with the basil and Parmesan. Mix in with tongs, adding a little of the cooking water, if needed, to make a creamy sauce that coats the pasta. Serve with extra Parmesan grated over the top, if you like.

Gave it 3 stars last time but made it again tonight and it was really tasty! Not sure what I did differently I think I added bit more lemon and basil this time, also a bit of black pepper.

The lemon juice was too much for my taste but delicious all the same.... Will add a bit less next time

Lovely recipe - I made it with wholegrain linguine and used the whole egg rather than just the yolk (just be careful not to heat it too much or it'll scramble!). Added some peas for colour and sat on the balcony in the sunshine with a glass of wine!! Yummy!

Nice light dish. I too added half the quantity of lemon, which was definitely the right decision I'd say...

Slightly lacked the flavour promised but a good quick meal I will probably make again. I used this amount of prosciutto for 2 people and seemed about right to me!

This recipe is the new family favourite!!
I added onion and mushrooms to the ham, used the whole of a small lemon and the whole pot of growing basil from the supermarket and it worked like a dream!
So quick and easy it didn't feel like I had actually cooked!!

I too reduced the lemon in the dish but still found it too lemony. Both myself and my husband were not a fan of this recipie at all.

really quick and scrumptious - great for a late night after a long day at work...
I used half fat creme fresh and I added in some frozen peas when mixing in all the ingredients together and it just gave it that little bit extra...they added a nice colour dimension as well!

this was really easy to make and absolutely gorgeous i added some mushrooms and really though it could of done with a bit of garlic but thanks for the suggestion to only half a lemon as a whole one would of been to much thanks xx

Did I do something wrong with this one? I was really looking forward to it because it has a lot of my favourite foods in it. I reduced the lemon juice as other people suggested but it was still very bitter, I used the exact quantity of prosciutto and it was really salty, so for me this dish was hard to eat. I might try make it again and see what happens.
