Method

  1. Cook the linguine. Meanwhile, tear the ham into small pieces and fry in the olive oil until golden and crisp.
  2. Drain the pasta, reserving a little of the cooking water, then return to the pan. Tip in the cooked ham. Mix together the lemon juice, egg yolks and crème fraîche, then add this to the pan along with the basil and Parmesan. Mix in with tongs, adding a little of the cooking water, if needed, to make a creamy sauce that coats the pasta. Serve with extra Parmesan grated over the top, if you like.

Quick and easy to make, tastes delicious - and it's super healthy - what more could you want? It's a firm favourite in our house. The basil is key though - don't leave it out!

This tasted gr8 although in contrast to the above comments I couldn't really taste the lemon in it. What I did feel though is that it came a little too sticky , the pasta tended to stick together too much .... Any suggestions pls on what might have gone wrong? I didn't put in the rest of the ingredients before the cream so maybe that's where I messsed up

Hi there maybe it had nothing to do with you and more to do with the lemon, I know the post is old but its for others as well. I roll my lemon on the work top until it softens then voila juicy lemon perfect for lemony pasta :)

We loved it with the whole lemon, but looking forward to trying it with the suggested mushroom or peas too!

I am starting to learn how to cook different, easy foods and this one was a great recipe to do. My family and I loved it. I definitely recommend this recipe.

I replaced the linguine with tagliatelle, which gave me thicker strips of pasta, I used less lemon and actually did pasta for two but the sauce as above (for 6) so it was REALLY creamy, which was fantastic, I also used smoked bacon instead with all the fat trimmed off.
Was a fantastically easy and tasty dish that I was definitely do again!!

Perhaps a little bland if your used to richer creamier sauces but, I thought this was a lovely, fresh, light alternative to your average pasta dishes. Perfect if you're in a hurry and watching the calories ;-)

It was OK but nothing special. Advantages: it was quick to prepare and good if you are watching those calories!
Disadvantages: a bit bland. My daughter found it a sweet. Also tbh the recipe says 'for 6' but I cooked it for 4 using same quantities as in recipe and it was just enough and we're not piggy eaters.

Quick, easy and delicious. Wondering if using egg white instead of yolk will make much difference as I want to reduce fat?
