  • 400g linguine or spaghetti
  • 90g pack prosciutto
  • 1 tbsp olive oil
  • juice 1 lemon
  • 2 egg yolks
  • 3 tbsp crème fraîche
  • large handful basil leaves
  • large handful grated parmesan, plus extra to serve, if you like

Method

  1. Cook the linguine. Meanwhile, tear the ham into small pieces and fry in the olive oil until golden and crisp.
  2. Drain the pasta, reserving a little of the cooking water, then return to the pan. Tip in the cooked ham. Mix together the lemon juice, egg yolks and crème fraîche, then add this to the pan along with the basil and Parmesan. Mix in with tongs, adding a little of the cooking water, if needed, to make a creamy sauce that coats the pasta. Serve with extra Parmesan grated over the top, if you like.

I might try adding bacon less lemon juice then before and maybe using less egg/creme faiche?

I used less lemon as the other comments have said but I still found it too lemony! I also found it was too liquidy but maybe I just went wrong somewhere? I was slightly dissapointed but I think I'll try it again and c if I can improve it.

such a tasty but light sauce, replaced ham with chunks of a roasted salmon fillet and everyone loved it!

We had this as a family meal and everyone loved it. I halved the amount of lemon. Think it would be nice with sundried tomatoes too.

I really liked that, made it today for lunch but made a few changes, wholewheat spag, no basil (not a fan) and regular butchers ham. Was lovely and very quick!

This recipe was lovely very simple and full of tangy flavour. I aslo added a couple of shallots to it which was tasty too

Quick and easy to make, tastes delicious - and it's super healthy - what more could you want? It's a firm favourite in our house. The basil is key though - don't leave it out!

Ok lol now I see what I did ... I had to mix everything together not put them in one at a time lol!!

This tasted gr8 although in contrast to the above comments I couldn't really taste the lemon in it. What I did feel though is that it came a little too sticky , the pasta tended to stick together too much .... Any suggestions pls on what might have gone wrong? I didn't put in the rest of the ingredients before the cream so maybe that's where I messsed up
