  • 2 avocados, peeled, stoned and cut into chunks

  • 50g ready-made croûton (or make your own)

For the dressing

  • 1 tsp Dijon mustard
  • 1 tbsp wine vinegar, any type
  • 3 tbsp extra-virgin olive oil

Method

  1. Make the dressing by whisking the mustard, vinegar and oil together, along with 1tsp water. Season well.

  2. Place the salad leaves and avocado chunks in a large bowl, then use your hands to toss the dressing through. Add the croutons just before serving so they stay nice and crisp.

Loved this recipe. I made it as part of my New Year's Eve dinner and it went down very well. I used homemade croutons which I made with garlic infused oil. Yum!

Made this tonight. I'm not a massive avocado fan but this was lovely, i thought the avocado would be stodgy but it actually cleansed the pallet. Made it with red gem lettuce and rocket and it held the dressing well. Seved it with Saras chilli (also from this site)
