Halloumi with triple crunch salad

Method

  1. Make a dressing by mixing together the vinegar, honey and mustard with a little pepper - you don't need to add any salt as the cheese is quite salty. Toss the halloumi slices in half the dressing, then place on a baking sheet. Griddle or barbecue for 5 mins, turning until browned and crisp on the edges.
  2. Stir the mayonnaise into the rest of the dressing, then toss through the radishes, peas and cucumber. Serve with the warm halloumi.

MAKE IT MEATY - SPICY CHICKEN SKEWERS

Replace the halloumi with 500g chicken breasts, cut into chunks and tossed with 1 tbsp olive oil, ½ tsp harissa and juice ½ lemon. Thread onto skewers and grill for 6-8 mins, turning until cooked, then serve with the salad.

    Great salad! Quite different and as I don't like tomatoes, really nice to see a recipe with halloumi that I don't have to leave them out of.

    What a great different meal! I decided to try this recipe after trawling through my old good food magazines looking for something a bit different. I had never tried Halloumi cheese before (and had been put off by a friend telling me it was 'squeaky' when you ate it) but I have to say it was really tasty and this dish was a winner! I added a few boiled new potatoes to make it a little more filling. Smiles all round. I think I will be making this recipe again.

    Delicious! I would add more vinegar to give it more bite though. Also sprinkled hemp seeds to add to the crunchiness.

    This is super easy while being really tasty and interesting too. A really good change from the usual suspects for a midweek dinner. The only thing is, the measurements are slightly on the mean side - perhaps it's meant to be an appetiser? I'll definitely make more of the salad next time.

    Easy I didn't grate the radishes though just sliced and diced still very nice. I would add to earlier comment thought it would be rather small portions for four adults.
