  • 4 skinless chicken breasts, each cut into 6 strips

  • 200g tub guacamole (or make your own)
  • 1 Little Gem lettuce, shredded
  • 148ml low-fat natural yogurt tub

Method

  1. Toss the chicken with the lime zest and juice, pepper, oil and a little salt. Cook on a griddle pan or barbecue for 6-8 mins, turning until evenly cooked and nicely browned.

  2. Heat the tortillas in the microwave, following pack instructions. Spread a little guacamole over each tortilla, top with some lettuce and chicken, then drizzle over the yogurt. Roll up and enjoy.

i love this recipe! super quick and easy and very tasty! a good one to make for guests too. we sometimes use sweet chilly sauce instead of guacamole - that's also very good.

tasty and fresh. different to normal fajitas. was nice that it was low fat and tasty. good mid week meal & will def make again. only put 4 stars due to the fat it was a little bland but was nice none the less :)

Really good. I used rocket instead of lettuce and added some cherry tomatoes, cucumber and cheese to the tortillas to bulk them up a bit. The supermarket had run out of natural yogurt so I and used low fat sour cream and chive dip instead, was very tasty but probably not as healthy!

the boyfriend enjoyed this and had the leftover chicken and salad for his lunch the next day. we added tomatoes - i'd obviously based my shopping list on the picture rather than the recipe! - but were let down by our shop-bought guacamole. would maybe try again with a home-made guacamole or just some avocado.

A great alternative for those guests who don't like hot, hot, hot Mexican food. I took the advice above and marinaded it for a while. My 5 year old nieces really enjoyed it.

These were really good. Some might say they're bland, but I thought it was nice to taste all of the fresh, pure ingredients instead of adding tons of spices and salsas.
My boyfriend loved it as well!

Made this a few times now and think it's very good. Agree with the previous comments - marinade the chicken for a while. I make it with "Best-ever chunky guacamole".

My boyfriend made this for me last night and it was delicious! A perfect mid-week meal quick, tasty and healthy. The flavours worked really well together. Will definately have him cook this for me again!

My hubby liked it and I definitely rate is well as a healthy mid-week meal. Will make it again, but probably as a lunch or add crispy roasted baby potatoes to fill it out as a dinner meal.

I let my chicken marinade for a couple of hours first, very simple and lovely quick, simple and tasty eat on a tray on your lap meal whilst watching the tele.

Really yummy and a healthy alternative to fajitas which are a fave of mine. I also let the chicken marinade for about half an hour before cooking which made them very flavorsome. I made the home-made guacamole from another good food recipe and it was all delicious together and very healthy!!

I marinade the chicken with the lime and black pepper, for between 20mins to 1 hr. It's only on re-reading that I realized this wasn't specified, but the marinating really does bring out the flavours.
