Carrot & coriander soup

Everyone loves this super healthy soup, perfect for an easy supper

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

    Love this soup I make it for my father-in-law as he's been ill so I'm trying to get lots of extra veg's down him and he loves it!!! This is now a regular on my menu >8-)

    Made this as a starter at christmas. Everyone loved it and my mother-in-law even asked for the recipe saying it was the best carrot and coriander soup she's ever tasted!

    This is the first soup I've ever made. I thought it was very nice. Tasted great with a crusty granary roll. I followed the recipe exactly but my other half and I thought the 1tsp of ground coriander was quite strong so I shall just use half a tsp next time. Had enough left over to freeze for another day.

    Made for the 1st time today with ground corriander and fresh - a real favourite now with my family :) We had ours with garlic baguette as i had forgot the crusty bread :( delicious!!, looking forward to cooking it again and again.

    Hi Made for the second time this time with ground corriander only - i prefered it 1st time round with the fresh - however i have read that it is nice with cumin seeds so i will try that aswell :)

    Yum, made this soup today. The soup wasn't as thick as I normally have, but it didn't detract from the lovely flavour, and actually made it quite a light soup. Next time I may add more potato. Don't hesitate to try it, its lovely.

  • 1 onion , chopped
  • 1 tsp ground coriander
  • 1 potato , chopped
  • 450g carrots , peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)
