Carrot & coriander soup

Everyone loves this super healthy soup, perfect for an easy supper

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

    ADDICTED! this soup is delicious. Definitely will be making this again and again. Great watching the kids wolf it down knowing that its so good for them. Fab for my flask when Im working too. A new family favourite!

    First homemade soup I've tried - loved it! So easy. I halved the ingredients 'cos I didn't want to make such a big batch and still got 3 very decent sized bows of soup out of it! Thought I might've added too much coriander but it was very tasty. Will definitely make again!

    This soup is fantastic. Made a mistake and added the fresh coriander instead of the ground at the beginning but still turned out fantastic. Brilliant recipe! Tastes just like the best shop bought.

    delicous and very easy, low fat too. I made the quick carrot and walnut bread on this site to go with it and they made a lovely and economical meal. Depending on the stock you use, make sure you taste it before adding any salt as you shouldn't need any

    It is lovely soup and easy to make. But dont put 40g of coriander in. My soup ended up green. Need about half of that I suspect.

    What a great soup! I read the ratings and decided to make a double quantity. BRILLIANT. Hubby loved it. We had Ciabata bread with garlic butter with it and it was gorgeous. I just put the rest into the freezer. No need to make such a lot in the future as it was so easy and quick!

    This recipe is great. I added some fresh green chillies (with seeds) and it gave the soup a great kick!! Really nice and one of my favourites :)

    Wow! what an quick easy recipe. I made double quantity ater reading comments from other members. I have to make a batch for a friend (then I will give heer a printout of the recipe! I made it exactly to the recipe,but, I used my stick blender rather than my Magimix. quicker to clean and it only took about 10-20 secs!Out of a score of 10 I give it 15!

    4* for healthiness and economy although I made the error of adding too much coriander on my maiden voyage - which throws the flavour and the colour off into medicinal territory!

    I added a very small amount of potatoe but also butternut squash a bit of garlic poowder and black pepper. It was absolutly delicious I am pregnant and I'm sure my baby loved it!!! We will see if my son likes it later as it made plenty and I will defo be makin and freezing when my baby is weaning. I wanted to make it because I had it at a wedding , never thought I'd like it as I only usually like jamaican or chunky soup but this soup has opened my mind to new things.
