Carrot & coriander soup

Everyone loves this super healthy soup, perfect for an easy supper

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

    I needed a quick and easy recipe to use up the mountain of carrots I have in my fridge. This recipe is soo simple and most importantly it is DELICIOUS. A fantastic and low calorie dish I highly recommend.

    We love this soup, I double up the recipe so there is some to freeze for the kids to have at later dates, I add an extra potato and 1 litre of stock insteed of 1.2 it makes it that little bit thicker.

    Very yummy soup - quite thick, think it was down to the potato quantity I used (doubled it to serve 8) so next time I'll not be as generous with the tatties!

    Absolutely delicious soup which was super easy to make! I added quite a few tablespoons of lemon juice which gave it a nice tang and there were plenty of leftovers to have the next day :) Would recommend it to anyone!

    Next time I'm going to add two medium potatoes instead of just one. I like my soups smooth but thick and it was a little bit too runny when smooth. Hopefully an extra potato will combat this! Overall though, apart from me moaning about the thickness: great soup with really nice flavours.

    This soup was the first soup I've ever made and I was thrilled with the result. Incredibly inexpensive to make, easy to make and healthy too, what more do you need? I definitely recommend making it and I stuck to the recipe and made no changes. I used Knorr Vegetable stock pots and a large baking size potato. Yum!

  • 1 tsp ground coriander
  • 1 potato , chopped
  • 450g carrots , peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)
