Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.

  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

I am currently on the 5:2 diet and this recipe is an excellent lunch. I made the soup without the potatoes, and as one of the other members commented, I added cumin powder to the soup, which made it more tasty!

For me this was too watery, I would reduce the amount of stock next time. I would also add a drop of cream, especially if the carrots aren't the best quality.

Amazing! 5*, i am not particularly fond of carrot and coriander (much prefer courgette and coriander) however am off on holiday and husband asked me to make it. Used sweet potato and added 1 1/2 tspn cumin, result was unlike any carrot soup I've tasted. You have to make this!

I made this for the 1st time yesterday afternoon. It was a big hit with my hubby and two children. Really tasty and simple to make. I added a kick of chilli powder and extra ground coriander, along with extra stock as i personally like a thiner and smoother consistency. Gorgeous!

Have made this gorgeous soup countless times! Family and friends are always asking me to make it. Be careful what stock you use as I have had to bin 2 batches. Oxo never fails! All in all this a quick, easy and super tasty meal which will always be a firm favourite in our household.

I added two teaspoons of ground coriander, a chilli and used sweet potato instead. Absolutely delicious.

Very nice and se easy to make, I added a teaspoon of cumin as suggested. I also doubled the quantities and froze loads for lunches.

I added a tsp of garam masala as suggested in one of the comments and I think it made all the difference. My husband said it was a five star dish.

Im rubbish at cooking but this was so easy and tastes lovely, just made it the way it said, superb, will be making this again.

Personally found this a little bland so added some cumin whilst cooking then seasoned with pepper and chilli flakes once served (think spiciness is a personal taste). Cumin gave it that added flavour it needed.

First time I ever made soup and it was wow!! So creamy, tasty and addictive. Impressive considering the ingredients used. Healthy too. Will never buy shop bought soup again.

This is lovely. Added a clove of garlic and softened the onion in butter instead of oil. Will definitely make again. Yummy :-)

I recommend Carol Vorderman's Carrot and Coriander soup. Far nicer and tastes fresher.

Very easy and tasty. Added a parsnip because I didn't have quite enough carrots. My 4 year old ate every bit and asked if we could have it every day, high praise from her but then I did tell her that it was woodland fairy carrot and moss soup.

Absolutely brilliant recipe:-) Have made it 3 times in a fortnight! I added a teaspoon of cumin seeds with the coriander...yummy!
