Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 tsp ground coriander
  • 1 potato, chopped
  • 450g carrots, peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

this is so easy to make and really tasty.. even though I forgot to put the fresh corriander in at the end it was still really nice!! just making a second batch now and I will remember the corriander this time!

This was a simple soup to make, and absolutely delicious, all my family enjoyed even the children! Only difference was I used fresh coriander instead of dried..........soup disappeared the day it was made.......I'll be making this alot!

Great recipe and really quick and easy. You can always add more potato to thicken more and chicken stock adds more flavour.

I didn't use the ground coriander, but it was really delicious nevertheless - and there was loads too :) MILES better than a tin!

I can't believe how easy this is. Its the first time I've made soup. Its quicker than driving to the supermarket to buy ready made and it tastes so much better.

It's the first time I've made soup!!! Such an easy recipe!!! Really tasty, and we all had seconds!! I might even make it for tomorrows lunch too!! 10/10 Fantastic!!

Just made this soup, wasn't sure about once cooked but when I blended it and added the fresh corriander it seemed to all come together. Absolutely gorgeous!!

Not a big fan. It was ok but not exceptional. I was only thrilled about the corriander (great!). If you want something tastier go for the broccoli mango soup (also on Goodfood).

Absolutely awful! I made this yesterday and can safely say this was the worst soup I've tasted in my life. This is the first recipe I've tried from this site and as a new cook the results were very disappointing and discouraging. Was going to cook again today but decided to leave the cooking to my mum from now on!

Didn't have any carrots, so used the lonely looking half a butternut squash sat in the fridge. Lovely,warming,healthy soup, kids ate it (8 & 4)no problem,with plenty left for our lunch tomorrow.

Really easy to make and a healthy, quick lunch option. I added some cumin for extra spice and if you're not having to be 'good', some grated cheese on top is a lovely addition.
