  • 1 tbsp vegetable oil

  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.

  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

I made this soup following the recipe to the t. The consistency was good, but I think it lacked flavour. I was so disappointed and threw it away. Will not be making again.

Just made this and added two cups of peas, a little extra coriander and roasted cumin seeds. Served with toasted salsa bread. Yum! Would definitely make this again for my veg-allergic husband.

This is the first soup I have ever made and it tasted really lovely.
Very simple to do and even nicer with my homegrown carrots and coriander.

This soup tastes quite good but I found that it was a bit too savoury for my liking and I added some sugar. Next time I make this soup I'm going to add some cream which will hopefully give it some extra sweetness and richness. I also feel it needs more carrots in the mixture because it comes out quite brown and tasting more like a vegetable soup than a carrot soup. Still, if you're looking for a healthy, good-tasting soup, this recipe is very good as a base, and is easy to build on.

I have made this soup 3 times now and wasn't sure about the coriander the first time I made it but I loved it and so did Hubby and 7yr old fussy daughter. It's now a family favourite, the coriander makes the soup,had it with fresh crust bread/rolls. It's cheap and sooo easy to make, love it!

Very delicious. The flavour of the coriander and carrot go well together and there is no need for cream as found in some recipes.

This soup is very nice, the problem i had was that i put too much coriander into and it turned a greeny colour! I only used three carrots, so my tip for someone who is going to make this soup is to use more than 3 carrots. Great recipe though!!!!

Made this twice in one week, so easy, especially with a hand blender. Used just 1 litre of stock as i like the soup to be a bit thicker. Really tasty with cheesy soda bread!
