Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 tsp ground coriander
  • 1 potato, chopped
  • 450g carrots, peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

I loved this soup. I do question the amount of stock though. I only added 500ml and the consistency was just right for me. I think it would be very watery if I'd added 1.2L as the recipe states.

I've made this a few times now and it never fails to impress. I didn't have any fresh coriander so I just added a bit of extra ground, tasted just as good :) Made home made bread to go with it, lovely!

This is a really easy recipe which produces great results. The only thing I did slightly differently was to put a lot more fresh coriander in at the end than the recipe suggests but this is because I love it so much and is just a personal preference. I love it and will certainly be making this regularly

Turns out fantastic and it's easy to make, most of the ingredients are in your cupboard so there is really no need to buy anything you wouldn't buy on ordinary trip to the supermarket. Tastes lovely too!

Quartered the ingredients as I was eating alone and made this for lunch earlier, enjoyed it so much I had to make it again this evening for the entire family! It's the first time my baby girl has eaten something with vegetables (rather than fruit) and actually wanted more.

This is the first time I made soup.
Very simple to make and tasted delicious, only needed a touch of pepper.

I made this soup following the recipe to the t. The consistency was good, but I think it lacked flavour. I was so disappointed and threw it away. Will not be making again.

a lovely warming soup and so very easy to make! i added a chilli to my onions and loved the kick it gave the soup!

Skipped the onion though. Let me add that I'm possibly the least domestic person you are likely to come across and this was a whizz even for me.

Just made this and added two cups of peas, a little extra coriander and roasted cumin seeds. Served with toasted salsa bread. Yum! Would definitely make this again for my veg-allergic husband.

This is the first soup I have ever made and it tasted really lovely.
Very simple to do and even nicer with my homegrown carrots and coriander.
