Add a dab of lemon juice and a swirl of coconut milk and it's the best carrot and coriander soup you've ever tasted!

Very nice and so simple

Excellent and ridiculously easy, especially if you don't bother peeling the carrots! Doesn't seem much point (as long as they're clean) since they're getting blended together anyway. The addition of potato makes this lovely and thick, and much more filling. I now have a good six portions in my freezer for future lunches.
