  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 tsp ground coriander
  • 1 potato, chopped
  • 450g carrots, peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

Excellent and ridiculously easy, especially if you don't bother peeling the carrots! Doesn't seem much point (as long as they're clean) since they're getting blended together anyway. The addition of potato makes this lovely and thick, and much more filling. I now have a good six portions in my freezer for future lunches.

I love this soup - sometimes I add a parsnip and some chilli to give it a sweet undertone and a kick.

Just finished making this soup. Its absolutly delicious! I added one garlic clove and a small red chilli(seeds removed) for some heat! Even my bf loved it and usually wont touch new foods! Definatly make again :)

I have just made this soup and it is delicious!!! Very simple and easy to make. I only had fresh coriander but didn't think dry was needed and also had to add salt and pepper and a few chilli flakes for a bit of a kick. Will defo make this again!!

A bit too sweet for me, but it is a matter of taste rather than a fault in the recipe. Otherwise - great. I made this many times and it is always cheap, easy and tasty.

Beautiful and the easiest of soup recipes, we have time and time again in Winter for our Saturday lunch. Perfect with crusty bread... yummy!!
