A simple, delicious recipe that I made yesterday and will be making again today.
My Son who doesn't like soup wanted it for breakfast it was so good. Will add the greek yogurt as suggested in todays batch and Cumin.

This one is so simple and quick, it's healthy, delicious and cheap to make - what more could you want. As a novice at most things in the kitchen, this was a pleasure to make and so fresh tasting! A winner!

I used a bit less stock (1 litre) and 2 tsps of ground coriander and it came out lovely. So easy! Will definitely use again.

Absolutely delish! Used slightly more carrot than recommended and used a large sweet potato in place of the normal potato. Still kept to 1.2L of stock making a lovely thick consistency. Used cumin as recommended - very nice. Would recommend adding a tub of 0% fat Greek yogurt for creaminess but still keeping the calories down. Made 4 decent sized servings. Will be making it again!

Used this recipe as the inspiration for a delicious carrot and coriander soup. Missed out the potato and used the remaining gravy of a rich oxtail stew, made up to 1.2 litres with vegetable stock. Crushed a teaspoon of coriander seeds because I didn't have any "ground". Lovely outcome!

This soup was so lovely. My children loved it. Must make double next time as it all went between the three of us.

Lovely! I added 140g of red lentils so it was very thick. I also used 2 tsp ground coriander and a sweet potato. Made five servings.

An absolutely amazing recipe for Carrot and Coriander soup!
I doubled the measure of carrots and potato (I used sweet potatoes as suggested in the comments), and I used 1.5 measure of the stock in the recipe, as I like my soup slightly thicker.
I used a tspn of ground coriander to start and then added more to taste as I didn't want to over power, and also added cumin which I saw suggested in the comments.
After blitzing (and still only using half a bag of fresh coriander) I returned to the pan to add cream and season a little further.
Delicious!

I'm not a big lover of soups, so when hubby suggested using the coriander in the fridge to make some soup, I reluctantly went online and found this recipe. I put the cumin in as suggested, used a sweet potato, and a little cream at the end. OH MY GOODNESS! This soup could change my opinion of soups forever! Will absolutely make this again, and again.....

By far the best carrot and coriander soup recipe I have tried. My husband who is not a soup person, absolutely loved it. I also, added a hint of cumin powder as suggested by one of the members, and it made the taste even better! Will be making it again this week.
