  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 tsp ground coriander
  • 1 potato, chopped
  • 450g carrots, peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

Absolutely brilliant recipe:-) Have made it 3 times in a fortnight! I added a teaspoon of cumin seeds with the coriander...yummy!

Made this soup as recipe apart from adding two chopped garlic cloves with the onion and frying, absolutely delicious, served it with a spoonful of Greek yogurt as garnish and homemade garlic bread.

I had some carrots to use as we were going on holiday and, after checking the fantastic Good Food site, decided to make this soup.
It's absolutely fantastic and will definitely be one that I make again and again. Incidentally, I didn't faff about with the recipe, I just made it as stated!!

I've made this twice now, once using a potato as suggested and once using a sweet potato. I can highly recommend using a sweet potato. The flavour is delicious and the colour intensifies the orange of the carrots. Yum!

Made this for the family today but added a little pepper and fresh cut coriander instead of crushed also added 100ml of double cream.... Was loved by all!!

Given the simplicity of the ingredients, I was really taken aback by how rich in flavour and fulfilling this soup was. It is now a firm favourite and even my sister, prone to being fussy, devoured her portion in double-quick time when I first made it for her. Love it!

i've made this soup about 10 times since discivering the recipe and it is delicious. The kids love it too! I usually add a little milk or cream at the end to give it a smoother texture.

I've made this soup 3 times over the Christmas holidays. I've had lots of carrots and potatoes left over so this soup has been great. It's really easy and very filling and tasty with the coriander. Enjoy!
