Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 tsp ground coriander
  • 1 potato, chopped
  • 450g carrots, peeled and chopped
  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

The soup was simple to make, using a hand held blender. However, the addition of fresh coriander was so overpowering and stank out the whole house. Disappointing result even after adding extra black pepper but will try again soon without fresh coriander and using freshly ground coriander seeds instead of powder. Have made carrot and coriander soup successfully in the past but, annoyingly, have misplaced recipes. Soup I made last night is still edible but "Coriander Soup" would be a better name for it!

Quick and easy recipe. I used ½ a supermarket packet of fresh coriander but I found this was too much and did overpowered my soup...

Just made this really quick and easy soup. I used a veggie oxo for the stock and added 1/2 teaspoon of salt, 1/2 teaspoon ground black pepper and 1/2 teaspoon of ground chilli powder.
A great,quick, low-cal soup that I will make again.

First time making anything from scratch! I figured I would start with something easy and it was absolutely delightful! Added a tsp of Paprika to give it a little bit of a kick. Will be making this again.

Made this soup yesterday and was disappointed. It was extremely and I mean extremely bland. I ended up putting LOADS of salt and pepper and finally lemon juice in it to get some flavour into it. I won't making it again.

I have made this soup previously to a different recipe and it was delicous. Unfortunately I misplaced the recipe, hence me making this version.

This is delicious! I used about 650g of carrots as they needed using and used 1.5l of stock, which resulted in a nice texture. I way over did the corriander (which also needed using up) but that suited me fine as I love the stuff. Yum yum yum.

Just made carrot and coriander soup with a slight change used one calorie spray to cut the calories .I have just had a bowl of it for my lunch and it was delicious will be making it again it was really easy to do .

A simple, delicious recipe that I made yesterday and will be making again today.
My Son who doesn't like soup wanted it for breakfast it was so good. Will add the greek yogurt as suggested in todays batch and Cumin.

This one is so simple and quick, it's healthy, delicious and cheap to make - what more could you want. As a novice at most things in the kitchen, this was a pleasure to make and so fresh tasting! A winner!

I used a bit less stock (1 litre) and 2 tsps of ground coriander and it came out lovely. So easy! Will definitely use again.

Absolutely delish! Used slightly more carrot than recommended and used a large sweet potato in place of the normal potato. Still kept to 1.2L of stock making a lovely thick consistency. Used cumin as recommended - very nice. Would recommend adding a tub of 0% fat Greek yogurt for creaminess but still keeping the calories down. Made 4 decent sized servings. Will be making it again!

Used this recipe as the inspiration for a delicious carrot and coriander soup. Missed out the potato and used the remaining gravy of a rich oxtail stew, made up to 1.2 litres with vegetable stock. Crushed a teaspoon of coriander seeds because I didn't have any "ground". Lovely outcome!
