Carrot & coriander soup

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

    A lovely smooth soup. Very nice with the Scredded Thai chicken salad from Olive March 2008 and some naan bread.

    This has to be one of the easiest and tastiest soups I have made. My husband keeps asking when we are going to have it again, in fact as it is raining today I think soup for lunch is a must!

    Made this today,excellant! What an amazing colour.Did not have any corriander so put cumin seeds instead.Will be making again very soon.Great for lunch in a flask but will make a little runnier.

    This was so easy to make and really yummy. As a bonus it's also low in fat and healthy. I made this for friends today with a fresh seeded loaf and they asked for seconds so can't be bad!

    Very easy to make and absolutely delicious. Used a stick blender and blended the soup in the saucepan. So, not only is it cheap, delicious and healthy, but there's also very little washing up!

    this was so easy, the kids helped to peel and cut the veg up, soup tasted great needed to add a bit more seasoning, i was hoping for some left over for my lunch today and the children asked for seconds so i will just have to make it again!! great easy receipe and only 2 points (weightwatchers)

    Made this today with loads of left over carrots and it was delicious! Didn't have any fresh coriander but it still tasted yummy. Goes great with some home made warm bread too!
