Cinnamon berry granola bars

These granola bars are great for lunchboxes, breakfast on the run or just with a cup of coffee

Method

  1. Heat oven to 160C/fan 140C/gas 3. Butter and line the base of a 18 x 25cm tin. Mix the oats, seeds and nuts in a roasting tin, then put in the oven for 5-10 mins to toast.
  2. Meanwhile, warm the butter, honey and sugar in a pan, stirring until butter is melted. Add the oat mix, cinnamon and dried fruit, then mix until all the oats are well coated. Tip into the tin, press down lightly, then bake for 30 mins. Cool in tin, then cut into 12 bars.

    Have made these twice now and used whatever dried fruit was in the cupboard (apricots/dates/raisins etc). They hold together really well and are moist but still crunchy. All the family love them, including 2 toddlers. My husband likes them as energy bars for long bike rides. Dead easy to make as well.

    A good basic recipe which can be varied according to individual taste. I'm not enthused by the combination of cinnamon and cranberries and the next time I make it I'll probably substitute something like candied peel (or crystalised ginger as others have suggested) and omit the cinnamon.

    Made these for my husband to take to work. They taste fantastic and really easy to make. I halved the sufar content second time round and added an extra spoon of honey and this worked just as well. Have become a favourite treat in our house. A must make recipe!

    A question please rather than a comment - going to make these bars as they sound so good. However, can anyone tell me the size of the cooking tray they used? (as the recipe only makes 12 I'm guessing not very big!). Thanks

    These are lovely. I find honey a bit strong sometimes so I used golden syrup. I also substituted half the butter for the same amount banana to cut the fat level. I think this probably makes them more crumbly but they are fine.

    I've also just made these with desicated coconut, pumpkin seeds, two bananas and then left out the sunflower seeds and cinnamon. The coconut REALLY made it. lovely.

    Very tasty! I just happened to have a bag of muesli with fruit and nuts, so used that and added some frozen berries and raisins. The only problem is that my bars don't seem to hold together very well. Does anyone have any sneaky tips? I don't know whether adding the frozen berries was a bad idea?

    Gorgeous - I varied ingredients quite a bit as fruit and nuts that needed using up. They were very tasty, good texture and kept for ages in a tin - love them!

    I haven't tried to make these yet but notice a few people mention their bars fall apart a little. One reason could be that you aren't packing the mixture densely enough into the tin. I find with all the granola bars I make its better to really squash it in. Either that or it could be to do with the oats you are using. The recipe states 'porridge oats', but if you are using wholegrain rolled oats rather than the oaties type the oats wont bind quite as well. Will give these a go and let you know how they pan out for me. :-)

    I finally made these the other day but after peoples comments about the mixture being crumbly I decided to omit the honey, sugar and butter and instead used a small can of sweetened lite condensed milk. I also used half oats, half rice bubbles - The result was much lower in fat and sugar, chewy, crunchy, sticky and delicious! (They needed to bake a little bit longer and in a slower oven, but it was well worth it!) Would definitely recommend.

    Just made these and they are lovely! a little sweet for me and next time I might leave the cinnamon out, I just wish I could see how to save this in my online binder! and can't find no guidelines to help, I have tried 'bookmark and share' but it doesnt seem to work.
