Tomato & basil sauce

Method

  1. Heat the oil in a pan, add the garlic, then gently fry for 1 min.
  2. Tip in all the other ingredients, except the basil, then bring to the boil.
  3. Reduce the heat, then simmer uncovered for 5 mins, stirring occasionally.
  4. To finish, tear the basil leaves, then stir into the sauce.
Try

Spicy Arrabiata

Use 2 garlic cloves and add a good pinch each chilli flakes and dried oregano. Stir in 1 tsp balsamic vinegar to serve.

Sweet spiced Moroccan

Omit the basil and add 2 tsp honey and ½ tsp each ground cinnamon and coriander instead of the sugar. Try it with lamb meatballs and couscous, or served with chicken.

Creamy mascarpone

Stir 2 tbsp mascarpone into the sauce at the end of the cooking time. Delicious poured over fresh tortellini, topped with a few more spoonfuls of cheese, then baked until bubbling at the edges.

    This was quite tasty although a little bland for my taste, but this could be because I had it on pasta alone. It's so easy and a quick sauce to whip up!

    I always use this tomato sauce recipe with pasta for a fast evening meal when I haven't planned for anything else. Really delicious and my 2 yr old loves it aswell.

    I'll never understand why people buy jars of pasta sauce when this is so cheap and easy as well as being so much tastier. I make on almost a weekly basis and serve with pasta or over a baked potato.

    Made this sauce last night with the addition of black pepper and 1 tsp - 2 tsp of balsamic vinegar. Absolutely delicious! I won't be buying a jar of tomato and basil sauce again.

    I adjusted the recipie slightly. I made it so it feels naughty, but still almost as healthy. I dont like tomato based sauces (i like the bad creamy ones!), so I followed the receipie but crushed 2 cloves of garlic into the oil at the start with some chilli falkes for a kick. I then followed the recipie but when simmering added some low fat greek yougurt, some more sugar, some tomato ketchup and some extra puree. Tastes fab and has a nice creamy texture :) Don't need exact measurments, just add a little at a time until it tastes right for you. Don't be put off by the initial sour yogurt, just add more of the others till it tastes scrummy to you! I also added the basil so it is more of a creamy tomato and basil sauce.

    We ran out of stir in pasta sauce and didn't know what to do so I thought that it couldn't be that hard to make it yourself so i searched Pasta Sauce and this great recipe came up. So glad we decided to give it a go and it's also very very easy to make, but I added a teaspoon of capers, splash of lemon juice and salt and pepper. When I added the basil near the end I also added a few cherry tomatoes. We had it with pasta and cheese.

    Such a simple sauce but so very tasty! My husband doesn't like tomatoes particularly, but loves this sauce. I can't wait to try the other variations and maybe creating a couple of my own!

    Really easy to make and super tasty! I didn't have any vegetable stock, but it still tasted really good! I think I'll add a few bits of chopped veg or something next time, but for a simple sauce, this is great :)
