Ingredients

  • 600g baking potatoes, peeled and chopped into chunks
  • 300g mature cheddar, 200g grated, 100g cubed
  • pinch cayenne pepper
  • large bunch spring onions, finely sliced
  • 1 egg, beaten
  • 500g pack all-butter puff pastry
  • jar caramelised red onions (we used English Provender Company), to serve

Method

  1. Heat oven to 220C/200C fan/gas 7. Boil potatoes for 15 mins until tender, then drain well and smash a little. Cool slightly.
  2. Mix the cheese, cayenne and onions with the smashed potatoes and stir to make a mouldable filling. Roll out the pastry to a rectangle about 25 x 35cm. Carefully lift onto a baking sheet and brush all over with beaten egg.
  3. Press the cheese mix along one of the long sides of the pastry, leaving 2cm pastry free on one side for sealing, and half of the pastry empty on the other side for folding over later. Fold the pastry over the filling and press the edges together, before trimming with a knife and sealing well by pressing the edges with a fork.
  4. Brush with egg and bake for 30 mins. Cool, then slice and serve with caramelised red onions. Can be made 1 day ahead

I used cubed feta and grated cheddar, sprinkled the pastry with sesame & poppy seeds. Very easy to make and all of it was eaten - a sure sign of success :-)

Lovely!!! really tasty, had a lot of filling left but froze it to use another time. Great for a snack or to take for lunch. Would also have this for an evening meal with salad.

Made this for a local residents' supper as one of my contributions to the buffet table. Seemed to go quickly and got lots of compliments. As it was the first time making the recipe I followed it exactly and it worked out well.

OMG this is gr8. Made it last night, changed it a bit tho. Used 200g cheddar and 100g stilton, didn't add spring onions and spread the caramelised onion along the pastry before putting the cheese mixture on top. It was really good, will be making again :o)

I love this !!

I found it best to use one pre rolled sheet of puff pastry and just reduce the potatoes by 100g and the cheese by 50g and it fits perfectly without bubbling cheese out the sides!!!

Tried this for a buffet but used emmental cheese and a leek - very tasty. Went down a treat with my guests - none left!!

Tried this out for an early New Year party last night and it went down really well. Very tasty and so easy to make. I used 375 g of pasrty and have enough filling to make another now. I rate this as a success, as was the party - shame about the permanent ink I managed to get onto my new pale grey leather handbag!!!!

DELICIOUS!!! As part of our buffet table, this went down really well! I used a 375g pack of pastry ... but it still worked fine (a small amount of spare filling but not much ... just enough for chef to do a generous taste test!!!!!). Much more tasty than expected! Really enjoyed it and will def make again.

This is such a tasty recipe - made it twice for school staff buffets, and they keep asking for it. Very easy to make and freezes well.

wow this made 13 full size pasties, very tasty, added a teaspoon of fennel seeds to spice up a bit, they were supposed to be for xmas but have all gone already!!!!

This was a lot bigger than I imagined and so we had lots left over......but that was fine with me as it is lovely as a snack warmed until it goes gooey in the centre! Delicious!

Made these for my wedding buffet and although i dont know how well they went down at the party (i was abit busy on the day!!) i served a slice to my mum and had some myself straight from the oven. Now, i really no not like this kind of thing - pastry, cheese and onion yuk BUT i thought this was rather tasty and would certainly make again.
I am considering the filing as an alternative to normal mash as i think it would suit something plain like chicken... MMmmm :) good recipe

I made this for a 'faith supper' our music society were holding. It went down very well and I plan to make it again. For the cubed cheese I used Red Leicester which made it more colourful, and I am intending to use Stilton another time. Delicious, and so easy.

i made this recipie but made single pies and used them as i needed them, i froze them before baking, although they didnt last long!! i think they taste much better than some shop bought pies and you only need a few ingredients. Fantastic.

I used 200g cheddar (100g grated/100g cubed) which was lovely. I really don't think it needed any more. Nice easy recipe, will make again.

This was easy to do and very tasty. Although I stuck to the same dimensions for the pastry as it states in the recipe, the end result was very large and I still had quite a lot of filling leftover.
