simple steamed salmon

Ingredients

  • For 1 person follow this, for 2 double the recipe, for 3, triple etc
  • 1 salmon fillet, skinless
  • 1/2 red onion
  • 1/4 lemon
  • 2 bay leaves
  • Pinch of mixed herbs
  • Seasoning of salt and pepper
  • 5 new potatoes

Method

    1. Place salmon fillet on a sheet of foil large enough to wrap around with extra space ( like a metallic pasty!)
    2. Place the bay leaves on top of the salmon along with mixed herbs, salt and pepper
    3. slice the onion into half moons and put on top of the salmon with the lemon wedge
    4. fold foil over salmon leaving a small hole at the top and place in a steamer
    5. Put the new potatoes into a pan of boiling water with the salmon in the steamer above
    6. boil and steam for 25 minutes
    7. Serve hot or cold with a crunchy salad and a light french dressing

i made this meal for my lunch the next day, it was perfect and filled me up until supper, try with any other fish and it will taste lovely hot or cold!
