  I followed this recipe but stumbled at the first hurdle, I melted the butter, syrup and Chocolate together over a saucepan of boiling water, as you usually would to melt chocolate (note the receipe doesnt specify how to melt). It didnt work, the chocolate went all dry and crumbled. I didnt know how to save it, so first lot of ingredients in the bin! Next time I tried it in a saucepan, but it was still looking to dry out, before melting properly, although at least this time, I managed to make my rocky road. It was disappointing though, as the recipe looked so easy.... Anyone know what I am doing wrong, or how to improve this?? Thanks Jo BTW it has great potential!!!

  I have yet to make this but it sounds like a problem with the chocolate. A milk chocolate, like dairy milk, doesn't melt well, just burns and crumbles. Perhaps a good cooking chocolate would work better.

  It sounds like you have the heat up too high - it must be really low, although if you used a double boiler the first time you shouldn't have had too much trouble unless the water was actually boiling or touching the bottom of the bowl. Try putting the butter (it'll help if it's really soft) and syrup in the pan first, then the chocolate on top and melt it all REALLY slowly on the lowest flame possible - it is one of those things you have to be patient with. And timtomtim is right, make sure it's decent chocolate with high cocoa solids.

  I ws nervous about cooking with chocolate because I've never done it before but I took a tip from another BBC Good Food receipe and melted it all together in 10 second blasts in the mircowave and it was fine, didn't burn or crumble but just melted smoothly. I just Tesco's own brand milk and dark chocolate. It's currently setting, so I haven't done a taste test yet, but in terms of ease, I thought this was a good receipe. I added mini-marshmellows and it does look very tastey!

  I'm not that keen on dark choc so only used 100g of dark and 300g of milk, and didn't use the orange peel or crystallised ginger! but i did use some glace cherries and extra nuts and the end result is very yummy now a firm favourite

  To melt chocolate you have to place it in a pyrex bowl and then place that bowl over a pan of boiling water, never letting the bowl actually touch the water, the heat will melt the chocolate perfectly never causing it to crumble. well unless you leave it for far too long! You can add the rest of the ingrediants one at a time or if you like put them all in and when the chocolate has melted it will all mix! hope it all goes well! Lvl 2 Chef Naomi

  These are positively divine! I altered the ingredients slightly, changing the crystallised ginger to 2 tsp ground ginger and leaving out with almonds and orange peel. They take no time at all to make, and set pretty quickly too! Very rich, yet moist and gives you the 'melt-in-your-mouth' sensation! A lovely treat to have with a cuppa.

  I made this as a christmas gift for my co-workers. I found that the first time i made it the chocolate crumbled when i melted it, it was because i wasnt using proper cooking chocolate. I also melted the chocolate and butter THEN added the syrup which seemed to help. Very tasty treats - a favourite of mine :)

  I really want to try these but I live in China and can't find golden syrup anywhere! Does anyone know what would be a good alternative? I thought of honey, but maybe that would make them taste too honey-y? Or is there any way I can make my own syrup using sugar? Thanks!!

  rE: MELTING THE CHOCOLATE.. I always melt chocolate with the butter in the microwave on LOW power for a couple of minutes, stir like mad as it begins to melt into a lovely smooth goo. Stir in the golden syrup and continue as per the recipe. For best results choose chocolate with a high cocoa butter content - it melts better AND tastes better...

  I made this with ginger biscuits, marsh mellows, fudge and almond flakes and it came out delicious!! Will be making this again most definitely!
