Lemoncurd is not easy to buy in the Netherlands so I decided to make my own

plus 6 hours for cooling

Method

  1. Clean the jar
  2. Melt the butter au bain marie
  3. Put in the sugar, lemonzest and lemonjuice . Beat well
  4. Put in the egg little by little. Don't stop beating. The curd will thicken as you beat.
  5. When thick enough put the curd in the jar and keep in the refrigerator

  • 150 gram white caster sugar
  • 110 gram dairy butter, unsalted
  • 3 eggs, beaten
  • 1 jar with lid
