Cucumber & elderflower spritzer

Cool off this summer with a light, refreshing cocktail made with fresh seasonal ingredients

Method

  1. Chop the cucumber into a few chunks, then put in a blender or food processor with the wine and elderflower cordial. Whizz until well blended, then pour through a sieve set over a large bowl or jug. Tip the contents of the sieve back into the machine, whizz again until pulpy, then sieve again into the liquid already collected. Add 1-2 tbsp of the cucumber pulp from the sieve into the liquid and discard the rest. Chill until ready to serve.
  2. To serve, fill glasses with a few ice cubes and some mint leaves. Pour in enough cucumber base to come halfway up the glass, then top up with soda water.

    it was a lovely warm summer evening here in france, and as we have a glut of cucumbers at present decided to try this out on some friends who were coming for dinner - it was perfect!! Followed the recipe - apart from adding a little of our own homemade elderflower champagne instead of some of the soda water and the result was brilliant - extremely refreshing and drinkable. Definitely one for the summer!

    We did this for a royal wedding party and it was a huge hit. So much so that we ran out of cucumber much to everyone's disappointment. Would definitely make again.
