Italian sausage, Puy lentil & rosemary stew

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Cut the potatoes into 2cm chunks, toss in olive oil then spread out on a non-stick baking tray. roast for 40 minutes until crisp and golden, turning a couple of times during cooking.
  2. Meanwhile, cook the whole sausages in a little more olive oil in a large pan until browned all over. Take the sausages out of the pan then add the onions and garlic and cook until softened.
  3. Add the chilli (if using) carrot and celery, then cook for 5 minutes. add 2/3 of the rosemary, all of the tomatoes, wine or stock and lentils. Slice each sausage diagonally into 4 thick chunks then add back to the pan. Simmer with a lid almost covering for about 30 minutes, or until the lentils are tender.
  4. When the potatoes are cooked, toss with some sea salt and the rest of the rosemary, then serve with the stew.

    Very good - used white wine - though found the stew a little runny so cooked half under lid and then half without lid.

    Really tasty and very simple - made it with mustard mash rather than the roasted potatoes recommended, soaked up the yummy sauce well! Will def be making again, a real winter warmer that looks good too.

    This is so simple to make and tastes great. I used the chicken stock instead of the wine. My husband loved it and is normally very fussy with eating lentils and vedge, but definitely making this again.

    I couldn't believe how tasty this was for so few ingredients. I skipped the potatoes to cut the calories and used vegan sausages. This is a great dish for veggies and vegans too if you just sub for veggie sausage. Maybe Good Food should have an 'easy to veganise' symbol for dishes like this.

    So tasty. I didn't do the potatoes, omitted the rosemary and used a fresh chilli, beef stock and Worcester sauce for a kick. Added peas and halves the sausages. Served with a little blue cheese sprinkled on top, versatile and quick.

    Absolutely delicious! I threw some chopped bacon bits in with the potatoes. Nutritious and cheap to make so a winner in our house!

    This dish smells devine!! Tasted lovely and even tastier the next day :) I used the chicken stock and served it on a bed of Rosemary roasted potatoes to bulk it out, a lovely winter warmer.

    This is really tasty and has become a regular in our house. I usually make it with a smaller amount of mashed potatoes instead of the roasted, and green beans on the side. Helps cut the calorie content down a bit!

    Love this recipe - and so does my husband who usually complains about sausage stew being boring. To cut down the time I usually miss out the potatoes completely and just serve with crusty bread - delicious!

Ingredients

  • 3 large potatoes , peeled (baking potatoes are fine)
  • olive oil
  • 4 pork sausages , look for ones with herb and garlic flavours
  • 1 onion , chopped
  • 1 garlic clove , crushed
  • pinch chilli flakes (optional)
  • 2 carrots , cut into small dice
  • 2 sticks celery , cut into small dice
  • rosemary needles , stripped from 4 small sprigs and chopped
  • 1 x 400g tin chopped tomatoes
  • 300ml white wine or chicken stock
  • 3 tbsp Puy or green lentils
