Balsamic roasted sausages with red veg

Make this dish a meal in a pan by stirring through some chickpeas or butter beans for the final five minutes

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the onions and peppers in a roasting tin, drizzle over the oil and vinegar and season well. Roast for 10 mins.
  2. Nestle the sausages, tomatoes and thyme, if using, in and around the veg, drizzle over the honey and cook for 25 mins more or so, turning the sausages halfway, until the sausages are cooked and everything is golden and sticky. Serve with mustard mash or crusty bread.

    I cooked this for my sister and I and put the sausages in with the veg at the very beginning and they were still not cooked after 45 mins so we had to take them out and finish them off under the grill. Am also not sure where my 'glaze' went as we had to add more vinegar when dished up to make it a bit more juicy. Having said all that, with the butterbeans in, we did enjoy the end result.

    Very tasty!! I added some squash with the vegetables, and I changed the chickpeas for bulgur weat, and served with a tzatziki including cucumber, garlic, yogurt ant fresh mint.

    What a fantastic recipe. The balsamic vinegar adds a lovely sweetness to the vegetables. My children (aged 12 and 6) loved this recipe too. I stirred through some butter beans at the end and there were enough leftover vegetables to combine them into a herby couscous which we had the next day with a picnic.

    A fantastic recipe and so easy. I have now made this twice and since my children don't rate the veggies that much, I combined the leftover veg plus juice with some couscous. Delicious!

    Great quick 'one pot' recipe. Added new potatoes in skins and some baby chorizo's to add a bit of spice and it was delicious. Does take slightly longer in oven to make sure the sausages are browned though, but just throw it all in a tray and forget about it.. easy!

    I love this recipe and have cooked it a few times, I cook the veg as per the instructions but as I tend to buy quite cheap sausages I bake them in a seperate pan (drizzled with a bit of extra balsamic and honey) because otherwise the amount of fat that comes out of them gives the veg a really horrible greasy coating. I usually serve them with buttery mash however I ran out of potatoes last time and had to add a tin of kidney beans instead, it was wonderful! Might try mixed beans in a tomato sauce next time as another user suggested.

    Very easy to do after a long day at work. Used Morrisons Caramelized Onion sausages which were yummy and served with M&S microwave mash so minimum effort. Really enjoyed it and will def do again for mid-week.

    Delicious! Very versatile dish. I only had 1 red pepper so threw in some jarred roasted peppers at the same time as the tomatoes. I also cubed a sweet potato which I put in at the same time as the onion. Yummy.

    Delicious, didn't use honey as didnt have any and cooked for a lot longer than advised - 50 mins instead of 25 to brown the sausages and give the veg a stickier texture
