Balsamic roasted sausages with red veg

Make this dish a meal in a pan by stirring through some chickpeas or butter beans for the final five minutes

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the onions and peppers in a roasting tin, drizzle over the oil and vinegar and season well. Roast for 10 mins.
  2. Nestle the sausages, tomatoes and thyme, if using, in and around the veg, drizzle over the honey and cook for 25 mins more or so, turning the sausages halfway, until the sausages are cooked and everything is golden and sticky. Serve with mustard mash or crusty bread.

    I part roasted some baby new potatoes, carrot and parsnips then cooked as per the recipe. A great mid week one pot meal. The sauce was very tasty.

    We all loved this. Found a tin of mixed beans in tomato sauce so threw that in. Cooked it for about 5 minutes longer to get a bit of colour on the sausage. Served with a few new potatoes. Will definitely do this again. Really good midweek supper.

    Very nice easy family dinner. I had to roast the sausages for 35 minutes rather than 25 as suggested by the recipe. This was to get a bit of colour on the sausages.

    Cheap, easy and totally tasty! I stuck to the recipe (including the time) and did cook it a little longer to get colour on the sausages. Went down a treat, am cooking it again for friends tonight. Served mine with rice and this worked really well.

    I added some aubergine to add to the 'red' veg theme...delicious. Have made it twice, for my family...our grandson aged 8, loved it. I am making it again for friends who are coming to stay. I have also made it with Linda Macartney veggie sausages, and it worked really well indeed.

    Easy and tasty. My hubby does not like sausages (he also doesn't like mash, but I love him anyway), but he could live with this recipe. I am taking full advantage and will be making it again, next time with the butter beans.
