Middle Eastern bread & goat’s cheese salad

Middle Eastern bread & goat’s cheese salad

Barney's version of fattoush – a classic Middle Eastern bread salad. Fattoush doesn’t normally contain goat’s cheese, but it turns it into more of a main meal

Method

  1. Cook the pitta bread on a griddle or in a toaster until brown and crisp. When cool enough to handle, tear into bite-size pieces.
  2. Mash the garlic clove with a pinch of salt, then tip into a large bowl and stir in the lemon juice. Tip all the other ingredients, except the olive oil and goat's cheese, into the bowl, then drizzle over the oil. Gently toss everything together until mixed and dressed. Serve the salad in piles with goat's cheese crumbled over each serving.

This was a wonderful fresh, crunchy, tasty salad. I skipped the lettuce and used more of the other ingredients. The only thing I didn't think worked was the goat's cheese - the flavour just couldn't stand up to the others. I'd use some feta or grilled halloumi next time.
