New potato, trout & lemon herb salad

A new healthy twist on potato salad that's filling enough for a midweek supper

Method

  1. Cook the potatoes until just tender. Drain and cool a little. Mix the lemon juice, spring onion and dill and toss with the potatoes.
  2. Carefully fold through the watercress and trout and serve.

    Lovely but simple flavour combinations. I baked a whole trout with the lemon and dill and then served with new potatoes and watercress as well as some soda bread. Delicious!

    So yummy! I added green beans, salt & pepper (instead of dill) and used rocket rather than watercress. I will definitely be making this again.

    Waste of space as a recipe. Essentially, "fold together all the ingredients that you've already prepared in some mysterious way, that we shan't bother to specify here." I submit that it's not a good 'simple salad recipe', if you need to look up *another* recipe in order to prepare it.
