Butternut Squash Soup
A simple warming soup

Preparation and cooking times
- To Make Stock Add 3tbsp liquid vegetable stock to 1.5 l of water and bring to the boil the reduce heat to simmer
- To Prep Veg peel and dice sweet potato peel de-seed and dice squash peel and chop shallots grate gigner
- add potato squash shallots and ginger to stock simmer for 45 minutes or until squash and potato are soft
- blend to a smooth velvety consistency
- Serve in a bowl and add a good swirl of Double cream to decorate
