Method

  1. To Make Stock Add 3tbsp liquid vegetable stock to 1.5 l of water and bring to the boil the reduce heat to simmer
  2. To Prep Veg peel and dice sweet potato peel de-seed and dice squash peel and chop shallots grate gigner
  3. add potato squash shallots and ginger to stock simmer for 45 minutes or until squash and potato are soft
  4. blend to a smooth velvety consistency
  5. Serve in a bowl and add a good swirl of Double cream to decorate
