Bulghar wheat, feta & broccoli salad
A great, healthy salad that makes the most of crunchy, lightly cooked broccoli

Ready in 30 minutes
- Tip the bulgar into a pan of salted boiling water. Take off the heat, cover and soak for 10-15 minutes. Drain well.
- Blanch the broccoli until just tender but still bright green. Toss the bulgar with all the other ingredients and season.

- 100g feta cheese
- 2 tomatoes , diced
- 2 tbsp pine nuts , toasted
- a small bunch flat-leaf parsley , chopped
