Blue Angel's oysters with hot ice

A brilliant way to start a summer dinner party, these look cheffy but are very easy to make

Ready in 20 minutes plus freezing

Method

  1. Gradually dissolve the sugar in 500ml water over a low heat. Add the lime juice and zest, grapefruit juice, chillies and tequila. Pour into a container and freeze.
  2. Every 30 minutes, rough up with a fork to form crystals until you have a frozen mixture. Serve on freshly shucked oysters.
