Method

  1. Cook the pasta according to the packet.
  2. Once boiling, heat the butter and oil and fry the garlic for a couple of minutes. Add the mushrooms and fry for a few more minutes. Season
  3. Add the creme fraiche and stir in. Add the lemon juice and herbs and mix.
  4. Drain the pasta and reserve a small amount of the water to thin the sauce if you want. Add to the sauce and stir in. Serve.

    I cooked this dish for my wonderful husband. He liked it but said that it wasn't really very posh - I agree with him, but then I am a bit of a dragon! Make sure you use a nice collection of exotic mushrooms and this dish would be divine...

    Used ricotta instead of creme fraiche as it was what I had in. So used extra lemon juice as ricotta didn't have the same acidity as creme fraiche. Very nice.

  • 1 packet of mixed mushrooms
  • 2 cloves of garlic, finely chopped
  • knob of butter
  • 1 tbsp olive oil
  • 1 tbsp creme fraiche
  • good squeeze of lemon juice
  • Salt and pepper
  • Fresh herb to garnish (eg. parsley, oregano)
